Lively wild flower aromatics. Alluvial gravels yield a fine, dry, mineral texture with succulent acidity. Drink now through 2020.
Selected parcels are machine harvested into individual one ton insulated bins. Long gentle pressing followed by minimal settling. 80% fermented in stainless steel, 20% fermented in very old French oak. All yeasts cultured from the individual vineyard blocks. Elevage on original yeast lees helps naturally stabilise and increase textural weight. No fining and minimal filtration. Estate bottled by gravity followed by bottle maturation before Spring release.
